About the Recipe
Ingredients
1 can artichoke hearts (chopped)
1 can hearts of palm, whole (chopped)
1 block of feta cheese (crumbled)
cherry or grape tomatoes
kalamata olives (sliced or chopped)
3-4 mini sweet peppers (sliced)
2 small mini cucumbers (sliced)
1/4 cup diced red onion
1 bag of Hormel mini pepperonis (optional)
1/4 cup avocado oil or extra virgin olive oil
lime juice
salt and pepper to taste
Preparation
Mix all ingredients together, add dressing and serve. Best when served cold. May need to add additional oil/lime juice to the leftovers as time goes on. Enjoy!
